If you grew zucchini this summer like I did, chances are you ended up with a lot of it. Zucchini is one of those garden heroes. Easy to grow, versatile in the kitchen, and delicious in both savory and sweet dishes. After a summer full of fresh garden zucchini, here are a few of my tried-and-true favorite recipes.
1. Zucchini Relish
A tangy, slightly sweet relish that’s perfect on burgers, hot dogs, or even grilled chicken.
- Grate zucchini, onion, and peppers.
- Salt and let sit overnight.
- Drain and cook with vinegar, sugar, mustard seeds, and turmeric.
- Can in jars or store in the fridge.
It’s a crowd favorite at BBQs and a great way to use up a bumper crop.
2. Air Fryer Zucchini
Crispy on the outside, tender on the inside — and way healthier than frying.
- Slice zucchini into rounds or sticks.
- Dip in egg wash, coat with breadcrumbs and parmesan.
- Air fry until golden and crunchy.
Serve with marinara or ranch for dipping.
3. Bonus Favorites
- Zucchini Noodles with Pesto: A lighter twist on pasta night.
- Zucchini Muffins: Moist, slightly sweet, and kid-approved.
- Grilled Zucchini: Brushed with olive oil, garlic, and herbs.
